What better way to start this blog off than with a simple yet delicius cookie recipe! Sweet gooey chocolate mixed with a little salty taste is a perfect combination that results in eating one cookie, and then another, and another…
With so many cookie recipes out there I can’t claim this one to be extravagantly different or entirely my own, but it does have a few tweaks á la Evmb.

Ingredients:
150g salted butter, softened
80g light brown muscovado sugar
80g caster sugar
2 tsp vanilla extract
1 large egg
225g plain flour
1/2 tsp bicarbonate soda
1/3 tsp salt
125g white chocolate chips
125g milk chocolate chips
Method:
Preheat your oven to Gas mark 5/190C/fan 170C and line two large baking trays with greaseproof paper
- Put the butter and both sugars into a mixing bowl and beat until creamy (it will not be completely smooth due to the sugar) and beat in the egg and vanilla extract
- Sieve the flour, bicarbonate of soda and the salt into the bowl and mix it with a wooden spoon to form your dough. Add in the chocolate chips and mix them until evenly dispersed throughout the dough
- Using a teaspoon, make small spoonfuls of mixture and place them on the lined baking trays, spacing them well apart enough they don’t merge. The mixture will make about 30 small cookies
- Bake for 8-12 minutes on the middle shelf of the oven until they are golden on the outside but still slightly soft in the centre if pressed
- Once cooked, leave them on their trays for 3-5 minutes and then transfer them onto a cooling tray to completely cool
Once your cookies have cooled you’re free to dig in!
By making these cookies yourself instead of buying from a shop you get the satisfaction as well as a clean conscience. A lot of store bought cookies contain palm oil.
